We keep our apiary small on purpose. Six is the number our orchard can support without thinning the wild bee population that lives in the hedgerow. We will never scale past it, even when demand asks.
Six small hives. One Hudson Valley orchard. Single-origin raw honey, cold-rendered beeswax skincare, and pollen wellness — picked the morning the bees have finished their work, never sooner. Hover any bloom in the meadow to meet it.

Our honey is poured cold, straight from comb to jar through a single mesh sieve. Pollen, propolis flecks, and the seasonal terroir of the field are left intact. What was in the hive is what is in your jar.
We leave at least 60 lbs of stores per hive going into winter — 15 lbs more than the regional standard — and we do not feed sugar syrup. The bees decide when there is surplus. We follow.
Apple, pear, lavender, clover, and the wild aster border. No two seasons taste the same — spring is bright and floral; late summer turns dark and almost smoky. We label every jar with the week it was poured.
The orchard's eastern row opened on Tuesday. By Wednesday afternoon every hive had a foraging bee a metre from the trunk. A short note on what that means for May honey.
